Marlene’s Cranberry Orange Cake

 

Ingredients:

Cake

 

1 med orange

½ Cup dried Cranberries

¼ Cup Walnuts

1 ¾ Cups all purpose g/f flour (from Celiac Group cookbook)

¾ Cup Sugar

1 tsp. Baking Soda

1 tsp. salt

1 Cup milk

½ Cup Margarine

2 Eggs

 

Topping:

 

¼ C Walnuts

1/3 C Sugar

½ tsp Cinnamon

1/3 C reserved OJ from Cake

 

  1. Preheat oven 350 degrees
  2. Squeeze orange reserving 1/3 C of the juice.  Toss remaining pulp and rind into food processor along with cranberries and nuts.  Pluse until a sticky mass forms.  Set aside
  3. Place flour, sugar, baking soda, salt, milk, margarine and eggs in a large bowl. Beat on medium speed 3 min.  Add cranberry mixture and mix well.  Place in a greased 9x13 pan and bake 30-40 min.
  4. Topping; Finely chop walnuts and add sugar and cinnamon in small bowl.
  5. Immediately after removing cake from oven, drizzle OJ on top of cake and sprinkle with cinnamon mixture.
